Sucrose (sucrose) scientific name is β-D-six ring glucoside, the relative average molecular mass is 342.30, white crystalline powder or crystal. Sucrose is a non-reducing disaccharide composed of D-glucose and D-fructose linked to C1 and C2 through an oxygen bridge, which is easily hydrolysed into glucose and fructose in the presence of dilute acid and has reducibility.
