Oleic acid is a monounsaturated Omega-9 fatty acid with a relative average molecular mass of 282.461. It mainly exists in the form of glycerides in animal and vegetable oils and fats. Oleic acid can be obtained by saponification and acidification of oils with high oleic acid content. The preparation method mainly includes freezing press method, distillation method and so on. The double bond trans-isomer of oleic acid is called trans-oleic acid.
