Ascorbyl palmitate

Ascorbyl palmitate (Ascorbyl Palmitate referred to as AP) is a white or slightly yellow powder crystal formed by esterification of ascorbic acid (vitamin C) and palmitic acid (C16:0). It has a slight orange smell, is extremely insoluble in water, soluble in ethanol, ether, animal and vegetable oils, and is very stable in concentrated or crystalline state, and is commonly used as an oil antioxidant.
